From the outside, a winery visit feels simple — sit down, sip, enjoy. But behind every glass is a process shaped by the desert, the seasons, and a lot of hands-on work that most people never see.
It Starts in the Vineyard
Everything begins with the grapes. In Moab, that means working with a high desert climate, like the intense sun, cool nights, and limited water. Vines are carefully managed throughout the season, from pruning to harvest, to ensure the fruit develops the right balance of sugar and acidity.
Harvest Is All Timing
Grapes aren’t picked on a set date. They’re picked when they’re ready. Our on-site staff members and agriculturalists are keeping a keen eye on our vines all year around. But that window can be short, especially in a place like Moab. Harvest often happens quickly and intentionally, because timing directly affects how the wine will taste.
From Grape to Glass
Once harvested, the grapes are processed, fermented, and monitored closely. Temperature, timing, and technique all play a role in shaping the final result. Some wines are aged longer to develop depth, while others are kept fresh and vibrant.
Small-Scale, Hands-On
Unlike large-scale wineries, the process here is more personal. Smaller batches allow for more attention to detail, more control, and more connection to what’s being produced. It’s not about volume for Moab Winery. It’s more about quality and consistency.
Tasting Is Part of the Process
What you experience during a wine tasting is actually the final step of everything that happens behind the scenes. Each wine reflects decisions made months (or even years) earlier from how the grapes were grown to how the wine was finished.
